ADLER Thermae opens its new Osteria: Alpine roots, Tuscan ingredients, and traditional craftsmanship come together with contemporary design. Explaining the design concept is Lukas Sanoner, Managing Partner and member of the Corporate Management team, who personally oversaw the project.
In the heart of Val d’Orcia and just a short distance from the spa village of Bagno Vignoni, ADLER Thermae, a charming spa resort, has undergone a renovation of its new Osteria, entirely designed and overseen by the ADLER Development team with consulting by architect Hugo Demetz.
The project is based on the balance between the identity of a traditional Tuscan village tavern and its reinterpretation through a contemporary, functional, and minimalist architectural language.
“The harmonious relationship with the landscape is a defining principle of the ADLER Spa Resorts & Retreats Group,” begins Lukas Sanoner. “Here, it has been translated into a coherent and pervasive architectural language that aims to restore balance to a reality saturated with stimuli. The project took shape through minimalist spaces that invite guests to rediscover their senses, inner calm, and connection with nature.”
In the warmer months, the Osteria opens up to the landscape thanks to an innovative system of retractable glass walls that dissolve the boundary between the built space and the natural environment. Conversely, in the cold season, the transparent surfaces become a contemplative feature, framing the winter landscape, which can be enjoyed from the comfort of a cozy, heated space. The relationship with nature is complemented by a human one, always authentic and shared: the kitchen is conceived as an open and integrated space, where the culinary act becomes a scenographic and narrative element.
“From a structural and material standpoint, the main building was constructed entirely of spruce wood sourced from the Italian Alps, creating a lightweight structure made airy by the large windows. “We wanted to create a dialogue between the ADLER Group’s South Tyrolean heritage and the region hosting the resort, striking a balance between Alpine roots and Tuscan identity. It is precisely the latter that is honored by the local pietraforte stone, used to clad the walls,” explains Lukas. “At the same time, the troweled raw earthen floors combine natural colors with high performance, helping to regulate a balanced and comfortable indoor microclimate. The ceiling, on the other hand, is defined by a wicker weave: a contemporary reinterpretation of an ancient basket-weaving technique that transforms flexible willow branches into supple and articulated structures.”
The centerpiece of the Osteria is a large lemon tree, above which an opening allows natural light to stream in. The decision to minimize artificial elements extends to the outdoor terraces as well, where Tuscan olive trees provide natural shade and comfort, even during the hottest months.
The true star of the experience remains the guest, who can choose between the conviviality of the large solid-wood table, set outdoors beneath a large olive tree and capable of seating up to twelve people; and the intimacy of the interior or a break under the lemon tree. Whatever the choice, you can enjoy a gourmet menu that is balanced, fresh, and seasonal, featuring high-quality local products, where every dish represents a taste experience that stimulates all the senses by blending Tuscan tradition with original and creative offerings.
