Asimmetrie (Asymmetries) is the name of the new menu created by Manuel Maiorano, founder of La Fenice Pizzeria Contemporanea and Crunch Pizza di Strada, the two restaurants in Pistoia that symbolize his creative flair.

Maiorano stages, or rather serves, a dialogue between opposites: hot and cold, soft and crunchy, elegant and pop, transforming contrast into a gastronomic language. The new menu therefore features all the tradition and innovation that distinguish Manuel Maiorano, a sensory journey that intertwines culinary elegance, contemporary techniques, and urban spirit.

Maiorano, already awarded 2 Spicchi Gambero Rosso and ranked 21st in the 50 Top Pizza Italia guide and 46th in 50 Top Pizza World, confirms with this project his extraordinary ability to transform pizza into a unique gastronomic experience, capable of uniting past and future in a play of shapes and flavors that capture the eyes and palate. A menu that breaks the rules of classic balance to explore new harmonies: dishes that dialogue between contrasts, irregular shapes, plays on textures, and unusual combinations.

Asimmetrie (Asymmetries) stems from this feeling, it is a memory that is reflected in the future as if on a surface of moving water: recognizable, intangible, but never the same.”

Manuel Maiorano invites his guests to close their eyes and let themselves be taken on a sensory journey, where each dish tells a piece of his culinary experience. The Asimmetrie menu starts with a five-course gastronomic tasting that continuously evolves following the rhythm of the seasons and the excellence of the freshest, highest-quality ingredients. It continues with Manuel’s iconic and most famous dishes, namely Tripla cottura, a highly leavened dough that is steamed, then fried, and finally baked to make it soft and crispy at the same time.

And then there is the Tris di montanarine, enriched with combinations created by Manuel Maiorano, such as stracciata di bufala and red prawns from Mazara del Vallo, or classic Neapolitan fried foods and coccoli served with Tuscan prosciutto. This balance between taste and geometric shapes is complemented by Uramaki Fusion, one of Maiorano’s most iconic creations, which celebrates the encounter between Italian tradition and the refinement of Japanese cuisine.
