SCAMBIO Rome: Shared Kitchen in the Heart of Prati.
From the vision of chef Fabrizio Cervellieri in Rome comes “SCAMBIO – Shared Kitchen”, a space where dining is truly a collective experience, a restaurant that blends innovation, tradition, and sharing.
In the Prati neighborhood, the new culinary project by Fabrizio Cervellieri, already known for his work at his restaurant Aede. “I wanted to create a restaurant where it wasn’t just the dish that told the story, but the entire creative process,” explains Cervellieri, “a space where those who cook, those who produce, and those who sit at the table can exchange experiences, perspectives, and anecdotes.”
A dynamic concept
SCAMBIO is not your typical restaurant: with its 20 seats and open kitchen, it offers a concept of “shared dining”.
The menu features both an à la carte selection, which rotates monthly with ever-changing dishes, and a “all-you-can-share” menu, priced at 38 euros per person, consisting of 7–8 small plates designed to be enjoyed together. “We want the meal to become a collective experience, where sharing becomes part of the taste,” emphasizes the chef.
Evolving dishes and a focus on ingredients
Cervellieri’s cuisine is modern and personal, inspired by his memories and past experiences. Among the most representative dishes are the risotto gratin, which combines Spanish arroz with the filling of a supplì, the Frico as a tribute to Friuli, and stuffed pastas made mostly with leftover ingredients.
“We want the meal to become a collective experience, where sharing becomes part of the taste” the chef emphasizes.
For lunch, SCAMBIO offers a small menu featuring more classic dishes and homemade pasta, while for the aperitif starting at 6 p.m., there is a 16-euro menu (drinks not included) featuring select dishes from the menu and a selection of Italian cheeses and cured meats.
Drinks and Pairings
Alongside the cuisine, the beverage selection completes the experience: about 30 natural wines, beers from the Baladin brewery, artisanal kombucha, and non-alcoholic wines.
“We’ve chosen small producers who reflect their regions, sustainable farming practices, and people’s stories,” explains Cervellieri, “in this way, the beverage selection becomes a natural extension of the cuisine.”
A space open to creativity
SCAMBIO also aims to become a platform for other chefs: every month, there will be collaborative menus with guest chefs, and throughout the year, 4–5 culinary establishments will be invited for longer periods.
“The value lies not only in the dish, but in the dialogue that arises around it,” says Cervellieri.

The project aims to make quality accessible to all palates and budgets. The cozy dining room encourages conversation and interaction among guests, creating a simple and pleasant atmosphere where informality and haute cuisine coexist.
