The Val di Non once again celebrates one of its most authentic gastronomic traditions: until March 1, 2026, Tortèl&Gropèl returns, the festival dedicated to the symbolic dish of the Noce valleys—potato tortèl—and its most iconic pairing, Groppello, the now famous native red wine that tells the story of the region’s wine-making history.
THE DISH THAT BRINGS PEOPLE TOGETHER
Potato tortèl is much more than a local specialty: it is an invitation to conviviality. Served in the center of the table on a large steaming platter, it is accompanied by cheeses from the valley’s dairies, lucanica sausage, speck, mortandela, carne salada, and the traditional cabbage and borlotti bean salad (with or without onion, as desired).
The strength of tortèl lies in its freedom: everyone composes their own dish according to taste, transforming mealtime into a shared and warm experience.
THE “HEROIC” WINE OF THE VAL DI NON
Elegant, rare, deeply territorial: Groppello is considered the “heroic” grape variety of the valley. Grown by just five families on terraced slopes overlooking Lake Santa Giustina, it requires dedication, care, and manual labor. The result is a spicy, fresh wine with a pleasant acidity, perfect for enhancing every bite of tortèl.
A glass of Groppello is a journey into the most authentic character of the territory.

MASTERCLASS: THE PERFECT TORTÈL
Want to learn how to cook tortèl like they do in the valley’s restaurants? You can, thanks to the masterclasses led by the chef.
After a welcome toast, participants will discover all the secrets: which potatoes to choose, how to grate them, how to make the ideal dough and achieve the perfect golden brown color.
The lesson ends with a tasting of the tortèi prepared, paired with cold cuts, local cheeses, and a glass of Groppello wine.
