There are places where every detail tells a story. Just step into a Billis restaurant to understand that here, a hamburger is not just a sandwich, but a journey through family memories and contemporary flavors. Founded in 2017 in Arezzo by the Billi family, Billis is now a gastronomic brand that combines passion, craftsmanship, and an all-Italian identity.

Behind the project are three brothers—Salvatore, Giovanni, and Domenico—along with their brother-in-law Marco, who has become an integral part of the family and the business. Each has a specific role, but they all share the same vision: to transform a dish that symbolizes American culture into an Italian experience, made with fragrant bread, authentic meat, and attention to detail.

Bread and meat: a daily ritual

The heart of Billis lies in its simplest combination: bread and meat. The meat comes from Maremma cattle farms, raised in a semi-wild state, with a strong flavor that reflects the most authentic Tuscany. The bread is a soft and fragrant bun, baked every day by Giovanni Billi in the in-house laboratories, with fine flours and slow leavening. No semi-finished products, no additives: just daily gestures that become a ritual.

Each sandwich is a small balance between tradition and innovation, capable of offering the surprise of simplicity done well. Not fast food to be consumed in a hurry, but Italian comfort food, contemporary and sincere.

The Italian passion for burgers

The payoff chosen by the family, “The Italian passion for burgers”, is much more than a slogan: it is the synthesis of a journey. Passion, because every recipe is born from trials, errors, and intuitions, in a continuous search for perfection. Burgers, because the focus is always on the essentials, without frills or compromises. Italian, because every detail—from the short supply chain to the conviviality of the restaurants—reflects the gastronomic culture of our country.

Billis has never tried to imitate American models. He preferred to rewrite them, bringing the Mediterranean soul and Italian craftsmanship to the burger.

From Arezzo to Milan: a journey of growth

The story of Billis begins in Via Romana, Arezzo, where the first restaurant immediately became a landmark. From there, the project grew, always remaining true to its values. In 2023, the challenge of Lecco arrived, with a welcoming restaurant that combines urban style and family warmth. Then, in 2024, the move to Milan, in Via Spontini, in the heart of the city. Here, the format changed, becoming faster and more dynamic, designed for delivery and takeaway, without compromising on artisan quality.

In Arezzo, on the other hand, a new model is being trialed: the drive-through, born from a collaboration with Q8, inaugurated in January 2025, which brings the artisan tradition of the sandwich to a fast and modern lane. And at the end of the year, it will be the turn of an opening in a premium outlet, with the aim of bringing Billis’ craftsmanship to the cosmopolitan public of shopping centers.

Street food on the move

Billis does not only exist in its fixed locations. During the pandemic, the idea was born to bring sandwiches to the streets, with food trucks capable of reaching workers and local communities. From there, the growth has been surprising: today, Billis trucks are present at the biggest Italian events, from the Formula 1 Grand Prix in Monza to Lucca Comics & Games, serving thousands of people in just a few hours. Each truck is a mobile kitchen, capable of maintaining the same standards as restaurants.

Street food thus becomes not only a response to a difficult moment, but also a new way of experiencing the brand: itinerant, inclusive, close to people.

A business that remains family-run

Despite its growth, Billis has not lost its heart. It all started with a family that moved from Campania to Tuscany in the 1990s, opening their first restaurants and learning the restaurant business on the job. It was in those kitchens, among flour and pizza boxes, that the Billi brothers grew up, turning a serious game into a true vocation.

Today, Billis is a national reality, with a steadily growing turnover and new openings planned. Yet it remains a family business, where mutual trust, love for the craft, and the desire to remain authentic are everyday values.
