A rustic and hardy breed, it is deeply linked to the woods and hills of Tuscany and to an outdoor farming system that respects natural rhythms.

One of the most evocative examples comes from art: in the cycle of frescoes entitled Allegory and Effects of Good and Bad Government, painted by Ambrogio Lorenzetti between 1338 and 1339 in the Palazzo Pubblico in Siena, there is a pig with a dark coat crossed by a light band. It is considered one of the oldest depictions of the Cinta Senese and shows how much this breed was already an integral part of the agricultural landscape and daily life of rural communities.

For one evening, a space symbolic of Florentine cuisine and social life was transformed into a contemporary village square, where Cinta Senese DOP returned to being what it has always been: food, culture, identity, thanks to those who are masters in the kitchen, such as Stefano Pinciaroli, chef at Borgo Petriolo, together with the staff of the Circolo. The evening was enlivened by Tuscan wines and the Quarto Podere group and their Florentine folk songs.
Not a promotional event, but a cultural gesture. In the dishes, in the words, and in the sharing, a clear vision emerged: that of those who believe that the value of a designation lies in fidelity to a history, a landscape, and an agricultural community that chooses tradition as a contemporary act. “Il Maiale Volante” has thus become a symbol of a supply chain that does not chase shortcuts, but cherishes time and responsibility.
