The heart of the bar is the historic room decorated in 1911 with Art Nouveau frescoes by Bruno Goldschmitt, inspired by the legend of King Laurin. Leading the beverage selection is Christian Gruber, bar manager who interprets mixology as an extension of the space that hosts it. His vision is clear: rooted in the territory and open to the world. Regional and fresh ingredients coexist with international spirits—from Japanese whiskeys to Caribbean rums—in a liquid narrative that changes with the seasons.
Winter favors more complex and enveloping structures, including cognac, whiskey, and warm aromatic profiles; summer, on the other hand, opens up to light freshness, gin, vodka, and local botanicals. Alongside the great classics, an essential test for every bartender, there are signature cocktails such as Life in Southtyrol, a tribute to the region that combines Z44 gin, fresh apple, lemon, honey, mountain pine, and smoked rosemary.
The Laurin Bar & Bistro is also a vibrant cultural center. Thursdays are dedicated to long aperitifs with DJ sets, while on Friday evenings the room is transformed into a stage thanks to the historic All That Music…! festival, which brings jazz, soul, swing, blues, and gospel to Bolzano with internationally renowned artists. The weekend continues with Live Piano Music on Saturdays and ends with Sunday Brunch, a relaxed ritual featuring sweet and savory dishes.
