Santabarbara. In Florence, from legend to “new fine dining”

There is a discreet plaque at Via Pier Capponi 72/A that holds a promise. Above it, a name is engraved: Santabarbara. Inside, however, everything comes to life: a warm light that envelops you, scents that change from day to day, clinking glasses, and voices that intertwine in a single melody. It is a place that does not claim perfection, but offers authenticity.

The name has its roots in the legend of Saint Barbara, a sixth-century Christian martyr and protector against fires, explosions, and lightning. A figure who reminds us how destructive fire can be if not controlled.

And it is no coincidence: opening a new restaurant in Florence today is really a bit like “playing with fire,” as one of the two chefs, Alessio Ninci, admits. In a city already saturated with restaurants, where every opening is a battle between dreams and failures, Alessio and Lorenzo Chirimischi have chosen to take a risk. Because passion, when it burns, knows no obstacles.

A table that becomes a conversation

Santabarbara is small and intimate, with just twenty seats. The heart of the restaurant is a counter that embraces the open kitchen, like in a sushi bar, but with a Florentine and contemporary soul. This is where Alessio and Lorenzo cook, serve, and tell stories. There is no filter between the dining room and the kitchen: dinner becomes conversation, closeness, sharing.

The atmosphere is warm, never stuffy: rock and hip-hop music accompanies dishes that surprise without ostentation, in a setting that shakes up the Florentine gastronomic scene with a breath of fresh energy.

A cuisine born from simplicity

As Lorenzo Chirimischi explains: “Santabarbara offers a new concept in dining with short menus that reduce costs for both customers and the restaurant, improving quality and reducing food waste and workload in the kitchen. The dining room is optimized thanks to online reservations, and the kitchen is streamlined to avoid excessive consumption and unnecessary storage: the goal is to purchase raw ingredients daily from small local producers, who will influence the menu. This philosophy allows us to offer instinctive, local, and contemporary cuisine, enriched by our previous experiences.“

The Santabarbara project aims to decontextualize the concept of ”fine dining,” finding a balance between sustainability, hospitality, and a unique gastronomic experience.

The philosophy is clear: short, unwritten menus, explained with care, which change every day based on what the market and small local producers have to offer. There are no “fixed” dishes, only tasting menus that follow instinct and the availability of raw ingredients. It is a way to guarantee freshness, reduce waste, and restore value to the present moment.

  • Fulmine (25€): 5 piattini veloci, personali o in condivisione, che illuminano la tavola.
  • Torre (45€): tre piattini e due portate principali, più confortevoli e tradizionali.
  • Cannone (45€): la stessa struttura della Torre, ma con sapori più esplosivi e creativi.
  • Spada (60€): il percorso più completo, cinque portate che rappresentano l’essenza di Santabarbara.

Non è solo un modo di ma

There are four courses, each with an evocative name, like weapons that tell of the connection with the patron saint:

  • Fulmine (€25): 5 quick dishes, individual or shared, that light up the table.
  • Tower (€45): three small dishes and two main courses, more comforting and traditional.
  • Cannon (€45): the same structure as the Tower, but with more explosive and creative flavors.
  • Sword (€60): the most complete menu, five courses that represent the essence of Santabarbara.

It is not just a way of eating, but a manifesto: demonstrating that catering can evolve with courage, finding a balance between sustainability, hospitality, and beauty.

Behind the stove: two stories, one dream

The lives and experiences of its founders lend credibility to this project.

  • Lorenzo Chirimischi took his first steps alongside Gaetano Trovato at the Arnolfo restaurant in Colle Val d’Elsa, before moving on to the three-Michelin-starred St. Hubertus in San Cassiano. After experiences at Essenziale (Florence) and Borgo Santo Pietro in Chiusdino, he chose the most difficult path: to start his own business.
  • Alessio Ninci, a graduate of the Cordon Bleu in Florence, worked with Marco Stabile at Ora d’Aria and with Matteo Lorenzini at Sesto on Arno. After years at Essenziale and a stint as executive chef at the Alchymist Grand Hotel & Spa in Prague, he returned to Florence to open the restaurant that is now his home.

Two different but complementary paths. Two souls that came together to create a place that combines research and conviviality, tradition and modernity, rigor and freedom.

A spark that looks to the future

 

In just one year, Santabarbara has not only filled tables: it has won trust. It has shown that simplicity, taste, and accessibility are not compromises, but a new path for the restaurant industry.

Because here, luxury is not perfection: it is the joy of being together. It is a table that becomes a refuge, a dish that becomes an encounter, a restaurant that chooses to walk the tightrope with courage.

And perhaps this is the secret: that Santa Barbara protects the sparks, but lets the flame burn for those who truly believe in what they do.
