Organic Ciliegiolo between sea and clay: identity, freshness, and depth
From young vines, between 10 and 15 years old, cultivated organically with only copper and sulfur treatments and natural fertilizers, comes a Ciliegiolo that accurately reflects its territory. The vineyards are located on clay soils rich in quartz, 200 meters above sea level and a short distance from the coast: an environment that benefits from significant temperature variations and contributes to the wine’s aromatic profile.
The spurred cordon training system (4,000 vines per hectare) supports balanced viticulture, while the manual harvest, carried out in the coolest hours of mid-September, preserves the aromatic integrity of the grapes from the moment they arrive in the cellar.
The vinification process prioritizes precision and respect for the fruit: after a night in a cold room to promote aromatic extraction and prevent oxidation, fermentation takes place in temperature-controlled steel tanks. Maceration on the skins lasts for about 15 days, followed by 10 months of aging, partly in barriques (20%) and partly in steel. The entire process is powered by renewable energy, making the wine suitable for vegans.
The nose opens with hints of chocolate, then evolves towards helichrysum and red fruits, enriched with notes of myrtle, cassis, licorice, and cardamom. In the mouth, it stands out for its freshness and tension, with a lively texture and a pleasant citrus spice finish.
Versatile in its pairings, it naturally accompanies both the succulence of a Chianina fillet and grilled white meats. However, it also surprises when paired with intense seafood dishes such as Cacciucco or stewed mussels, and expresses itself with elegance alongside snails, whose savory flavor it supports without overpowering.
